I really struggle with menu planning. In my head I know it's super-efficient to take ten minutes to create a list of 7 meals and then go to the grocery store one time to buy all the ingredients at once. But for some reason my heart thinks that my nightly 5 pm ritual of cluelessly standing in front of an open cupboard hoping that ingredients (which may or may not have already been purchased) will magically jump off the shelves and assemble themselves into a beautiful, home cooked meal is way more fun!
(And that, my friends, is how you end up eating oatmeal for dinner.)
I need you all to keep me accountable.
Each week I am going to post my family menu plan here on my blog. Today is the first installment. In the future I'll be posting these on Friday so that I can have my ingredients gathered together and be ready to start the new week on Sunday.
Because of our diet, the menu plans will be one of the most allergy friendly menu plans you'll find online. We're vegan vegetarian and gluten free. We don't generally eat soy and we avoid GMO's, pesticides and ingredients that nobody can pronounce and we're-not-even-sure-what-they-actually-are like the plague. And we do all that on a budget.
