One of my very favorite recipes on my blog (Ok…. favorite recipe on the planet!) is my Abracadabra Salad Dressing recipe. I call it that because when you pour this dressing on your family’s salad, it’s like magic! All the salad disappears!
The first time we tried this dressing, Papa the Farmer and I had a real fight about who was going to eat the last serving of salad. It was a friendly fight, but still a fight. We settled it by cutting the last piece of lettuce in half. This dressing is that good.
The one qualm I’ve had about the original version of this dressing is that, like most salad dressings, it has a lot of oil in it. So, I got creative and I have developed an inexpensive, oil-free version. By replacing oil with sunflower seeds I’ve not only made the dressing tastier, it’s also healthier and it’s less expensive to make! Now that I’ve tried it this way, there’s no going back to the old way! This dressing is so delicious!
Ready for my (not so) secret recipe? Here you go:
- 1 cup sunflower seeds
- ⅔ cup lemon juice
- ⅔ cup honey
- 1½ cups canned tomatoes
- ⅓ fresh onion (approximately)
- 3-4 fresh garlic cloves
- 1 tsp salt (increase to 3 tsp if the sunflower seeds are unsalted)
- water (optional)
- Place all the ingredients in a blender and blend well until very smooth.
- You may need to add a little water to make the dressing your desired consistency.
- Pour over a garden salad and enjoy!
Yields 6 cups of dressing. (You're going to need that much!)
